Tucked within the halls of Cedarbrook Lodge’s Seattle Southside campus is an oasis of culinary excellence, all set in a warm and inviting atmosphere one won’t soon forget.
Copperleaf Restaurant is a haven where friends, family, solo guests, and groups alike can relax and enjoy inspired cuisine sourced and prepared the right way. Many of our dishes feature ingredients that were harvested quite literally right outside our door, in garden plots full of organic plants, seeds, and roots. This practice echoes our commitment to both locality and sustainability, making meals at Copperleaf something our guests can feel good about, both in taste and in sourcing.
Together with our dishes, our talented bartenders create beverages which are the perfect accompaniment to each meal. They create scratch-made drinks boasting the finest quality ingredients, all combined with knowledge, passion, and of course, just the right garnish to give it that perfect exclamation point.

Meet our Executive Chef Joshua Hart
Executive Chef Joshua Hart brings a thoughtful, ingredient-driven approach and deep Pacific Northwest culinary experience to Cedarbrook Lodge’s Copperleaf Restaurant & Bar, where he oversees the culinary direction, banquet and catering programs. A Northwest native raised on a wheat farm in rural Idaho, Hart developed an early appreciation for ingredients, craftsmanship and the connection between food and the land. Since joining Cedarbrook Lodge in 2024, Hart has brought a collaborative leadership style and curiosity to the culinary program, creating memorable guest experiences inspired by seasonality, creativity and his love of food.
